¼ cup gf soy sauce (Tamari) 2 teaspoons ketchup 1 teaspoon fish sauce 1 teaspoon sugar 1 Tablespoon rice vinegar 3 Tablespoons canola or vegetable oil About 9 oz linguisa sausage (linguisa is portugese sausage found at Asian grocery stores, you can substitute with other gf sausage), thinly sliced or chopped into ½” pieces 3 scallions, sliced 1 Tablespoon fresh ginger, minced 1 small clove garlic, minced ¼ teaspoon red pepper flakes 4 cups, cold, cooked long grain white rice ¼ cup chopped cilantro ¼ cup chopped fresh mango
Directions
In a small bowl, whisk together soy sauce, ketchup, fish sauce, sugar and vinegar. Set a wok or large heavy skillet over high heat and add oil until smoking. Add sausage and cook, stirring until sausage is lightly browned, about 2 minutes. Add scallions, ginger, garlic and red pepper flakes and toss and cook for about 1 minute. Add rice and toss and cook until heated through. Add sauce, and stir-fry until until most of sauce is absorbed, about 2 minutes. Add scallions, cilantro and mango and toss to combine. Season to taste with salt and pepper and serve immediately.
