Salad: 1 cup torn romaine lettuce 1/4 cup carrot, sliced thin or peeled into long strips 1/4 cup radishes, thinly sliced 1/4 cup Engish cucumber, thinly sliced
Dressing: 1-1/2 teaspoons red wine vinegar 1/8 teapsoon gf stone-ground mustard 1-1/2 Tablespoons extra-virgin olive oil 1-1/2 teaspoons fresh Italian parsley, minced 1 garlic clove, minced 1 teaspoon fresh thyme leaves Salt and freshly ground black pepper
Toss all salad ingredients in a medium salad bowl.
In a small bowl, whisk red wine vinegar, gf mustard and olive oil together until emulsified. Add parsley, garlic and thyme; mix thoroughly. Adjust seasonings to taste with salt and freshly ground black pepper.
Just before serving, drizzle salad with vinaigrette and toss to coat thoroughly. Adjust seasonings with salt and freshly ground black pepper.
