One 14 ounce can garbanzo beans, rinsed and drained 1/4 cup gf pancetta, chopped 1 scallion, chopped 1 garlic clove, sliced 1 Tablespoon parsley, chopped Pinch of marjoram 2 Tablespoons olive oil 2/3 cup tomatoes, peeled, seeded and chopped 3/4 cup lean pork, chopped into 1/2" pieces Salt and pepper to taste 1/2 cup Parmesan cheese, grated
Heat a large heavy saucepan over medium-high heat. Add oil and when hot, add pancetta, scallion, garlic, parsley, marjoram and saute. Stir in beans and tomatoes. Add enough water to cover and bring to a boil. Add pork. Reduce heat to low, cover and simmer for 2 hours. Season with salt and pepper and garnish with parsley and Parmesan cheese.
