Makes 4-6 servings. Difficulty
3 cups water 1 cup lentils, rinsed and picked over 1 teaspoon salt 3 Tablespoons red wine vinegar 3 Tablespoons olive oil 2 medium ripe tomatoes, chopped 1/2 cup fresh basil, sliced thinly Salt and freshly ground black pepper to taste
In a medium saucepan bring water and salt to a boil. Add lentils; return to a boil. Reduce the temperature to low, cover and cook for 20 minutes or until lentils are tender. Strain.
Place lentils in a medium bowl & combine with remaining ingredients. Season to taste with salt and freshly ground black pepper. Serve warm or at room temperature.
