6 cups water 1-4" piece of kombu 2 Tablespoons dried bonito 5 Tablespoons gf miso 1/2 pound tofu, cut into 1" cubes 1 carrot, thinly sliced 1-5" piece of burdock root, peeled and thinly sliced 2 green onions, thinly sliced
Pour water in a medium saucepan and add kombu. Bring to a boil and discard the kombu. Add bonito and remove from heat and let stand a few minutes. Strain liquid and pour back into pan. Add carrot and burdock and cook on low until vegetables are tender. Add tofu. Add the miso and stir until completely blended. Add green onions and serve.
Kombu,(dried kelp), dried bonito, (dried fish) and burdock root, (a long, thin, light brown root) can be found in Asian markets. Burdock root can also be found in natural or health food stores.
Make sure you buy miso made from rice and soy beans.
