3/4 pound gf Linguisa or Chorizo sausage 2 Tablespoons olive oil 4 cups onions, finely chopped 2 cloves garlic, minced 5-6 cups red potatoes, cut into 1/2 " pieces 8 cups gf chicken stock 6 cups Swiss chard and kale- chiffonade Salt and pepper to taste
Directions
In a medium skillet, saute sausage until cooked through. Remove and set aside.
Heat oil in a large saucepan. When hot, add onions and cook until translucent. Add garlic and cook for 1 more minute. Add potatoes and stock and bring to a boil. Reduce heat to a simmer and cook until potatoes are just tender. Add greens and cook for another 5 minutes. Add sausage and cook for 3 more minutes. Season to taste with salt and pepper and serve.

Chiffonade is a technique of cutting greens into very thin strips. Simple roll the leaves up like a cigar and slice 1/8th" slices across.
