1/3 cup good quality extra virgin olive oil 1/4 cup red wine vinegar 1 teaspoon good quality balsamic vinegar 2 Tablespoons onions, chopped 2 Tablespoons fresh Italian parsley, chopped 1 garlic clove, minced Pinch of sugar 16 medium white mushrooms, stemmed 1/2 red bell pepper, cored, seeded and cut into 1 inch pieces Salt and freshly ground black pepper to taste
In a large zip-lock bag, combine all ingredients except salt and pepper. Seal, turning bag until contents are thoroughly mixed and mushrooms are well-coated. Adjust seasonings to taste with salt and freshly ground black pepper. Marinate at room temperature for 2 hours, turning bag occasionally.
