1 cabbage, shredded in a food processor, or by hand 2 teaspoons olive oil 1 onion, sliced 1 carrot shredded 2 apples, peeled, cored and shredded 1 pear, peeled, cored and shredded 1/4 cup dried cranberries, chopped 1 teaspoon salt 1/2 teaspoon pepper 1 teaspoon caraway seeds 1/3 cup cider vinegar 2 Tablespoons sugar 1/2 cup water 2 Tablespoons fresh parsley, chopped
Directions
In a large heavy saucepan, heat oil, add onion and carrot, sauteing until softened. Add cabbage, apples, pear, cranberries, salt, pepper, caraway seeds, vinegar, sugar and water. Bring to a boil, reduce heat to medium and cook until cabbage is tender and most of the liquid has evaporated. Add parsley and mix. Serve immediately.
