4 cups cream 4 cups milk 1 onion, chopped 1 carrot, chopped 6 ounces gf bacon, diced and fried 4 cups cauliflower, coarsley chopped 1/2 cup gf sour cream 2 teaspoons salt White pepper
In a medium saucepan bring cream and milk to a boil, then strain through a sieve into a large pot. Add onion, carrot and bacon. Bring to a boil, then reduce heat to a simmer and partially cover. Simmer for 10 minutes, being careful that it does not boil over. Add cauliflower to soup and simmer for 15 minutes.
In a small bowl add about 1/4 cup hot soup to sour cream; stirring until smooth. Add sour cream mixture back to pot of soup. Add salt and adjust seasonings, adding pepper. Serve.
