1 cup ripe tomatoes, seeded and chopped 1-1/2 Tablespoons concentrated sun-dried tomato paste or 1/2 cup sun-dried tomatoes packed in oil (drained) 1-1/2 Tablespoons balsamic vinegar 3 Tablespoons extra virgin olive oil 1 garlic clove, minced Salt and freshly ground black pepper 8 cups of gourmet mixed greens 1/2 English cucumber, peeled and sliced 8 slices of red onion 1/4 cup Kalamata olives, pitted and chopped coaresly 2-3 ounces feta, crumbled (optional)
Place tomatoes, sun-dried tomatoes (or paste), balsamic vinegar, extra virgin olive oil and garlic in a food processor. Process until smooth. Adjust seasonings to taste with salt and freshly ground black pepper.
In a large salad bowl, toss mixed greens with cucumbers, red onions and Kalamata olives. Drizzle 1/4 of dressing onto greens and toss. Continue adding dressing until greens are all nicely coated but not drenched. Garnish with crumbled feta if desired.
