1 medium fennel bulb, fronds removed 3 navel oranges, peeled and cut into segments 1 Granny Smith Apple, peeled and sliced thin 1/2 small Daikon, peeled and cut into thin strips 7 cups gourmet salad greens, washed and crisped 1/4 cup white wine vinegar 1 teaspoon gf Dijon mustard 1/2 cup canola oil 2 large shallots, minced Salt and freshly ground black pepper to taste
Cut fennel bulb in half vertically. Slice crosswise into thin strips. In a large bowl, combine fennel, oranges, apples and Daikon.
In a small bowl, whisk vinegar and mustard. Whisk in oil until mixture is emulsified. Stir in shallots and season to taste with salt and freshly ground black pepper. Add dressing to fennel mixture and toss. Cover and refrigerate for 30 minutes to allow flavors to blend.
