For vinaigrette: 1 shallot, minced 1/2 teaspoon kosher salt 2 Tablespoons wine vinegar 1/4 cup olive oil Fresh ground pepper
For nuts: 1/3 cup sugar 1 cup pecan halves
For salad: 8 handfuls gourmet greens 2 ripe Bartlett or Anjou pears, sliced but not peeled 1/4 pound feta cheese, sliced
Directions
For vinaigrette: Combine all ingredients and whisk until combined.
For nuts: Place a skillet over medium heat and add sugar. When sugar starts to melt, add nuts and stir to coat. Remove nuts to a dish and set aside.
For salad: Toss greens with vinaigrette and adjust seasonings.
Place a mound of greens on each salad plate and place sliced pears to the side or leaning against greens. Add a slice of feta and a sprinkling of nuts. Serve immediately.
