2 medium firm pears, cored and sliced but not peeled 4 small handfuls of gourmet greens 1/4 cup feta, crumbled 1/4 cup thinly sliced red onion 12 shavings of Parmigiano Reggiano 3 Tablespoons olive oil 1 Tablespoon balsamic vinegar Salt and fresh ground pepper to taste
Wash and spin greens and place in a bowl.
Whisk vinegar and oil until blended, then season to taste with salt and pepper. Pour dressing over greens and toss.
Place an equal amount of greens on four salad plates. Fan slices of 1/2 of each pear against the side of the greens on each plate. Top with equal amounts of onion slices, crumbled feta and long shavings of parmigiano reggiano cheese, allowing the cheese to fall over the salad. Serve immediately.
You can obtain the desired long cheese shavings by using your potato peeler.
