1 cup lentils 1/4 pound gf bacon, chopped 1 onion, diced 2 small potatoes, peeled and diced 1 celery stalk, diced 1 garlic clove, crushed 4 cups gf beef stock 1/4 teaspoon ground cumin Pinch of cayenne pepper 1/2 green bell pepper, seeded and diced Salt and fresh ground pepper to taste
Directions
Rinse lentils and place in a saucepan; cover with an inch of cold water. Bring to a boil, reduce heat and simmer for 20 minutes. Drain and set aside.
Saute bacon until cooked; strain off all but 3 tablespoons fat. Set aside.
Return saucepan to medium heat; adding onion, potatoes and celery. Saute for 5 minutes. Add garlic, stock, cumin and cayenne pepper. Bring to a boil, cover and reduce heat to a simmer. Simmer for 10 minutes or until potatoes are tender. Seaon with salt and pepper to taste.
Add lentils, green pepper and bacon bits; simmering just until heated through. Serve immediately.
