2 Tablespoons olive oil 1 onion, chopped 1 teaspoon ground cumin 1 large carrot, chopped 2 cups lentils 6 cups gf chicken stock 2 cups Swiss chard leaves, washed and chopped Gf sour cream or creme fraiche for garnish
Directions
Place a large saucepan over medium heat and when hot, add oil. Add onion and saute until translucent. Add cumin, carrots, lentils and chicken stock and bring to a boil. Reduce heat to low and simmer until lentils are tender, about 20 minutes. Place a large skillet over medium heat and place the just washed and drained, but still wet, Swiss chard into the skillet and cook until just wilted. Remove from heat and add to the lentil mixture. Season to taste with salt and pepper and garnish each bowl with a little creme fraiche or gf sour cream.
Tips
If soup looks to thick prior to adding chard, add more stock or water to thin.
