Spinach w/Mushrooms & Red Wine Vinaigrette

Ingredients

1-1/2 teaspoons red wine vinegar
1/8 teapsoon gf stone-ground mustard
1-1/2 Tablespoons extra-virgin olive oil
1-1/2 teaspoons fresh Italian parsley, minced
1 garlic clove, minced
1 teaspoon fresh thyme leaves
Salt and freshly ground black pepper
1/2 pound fresh tender spinach, stemmed and torn into bite size pieces
1/8 pound mushrooms, trimmed and thinly sliced
Directions
In a small bowl, whisk together vinegar and mustard. Whisk in oil, parsley, garlic and thyme; season with salt and pepper.

Arrange spinach on 2 salad plates and scatter mushrooms over spinach. Spoon vinaigrette over salads and serve.
