1/2 pineapple, peeled, oored and cut into 1/2 " pieces 1 papaya, peeled, seeded and cut into 1/2" pieces 1 mango, peeled, seeded and cut into 1/2" pieces 2 bananas, peeled and cut into 1/2" slices 3 kiwi, peeled and cut into 1/4" slices 1/4 cup rum* optional 1/2 cup shredded coconut 1/2 cup chopped macadamia nuts 1 gf cup pina colada or other tropical fruit yogurt Mint leaves for garnish
Preheat oven to 350 degrees F. Spread coconut on a baking pan and toast in the oven for 5 minutes. Combine all fruit in a large bowl and add rum. Gently toss to coat fruit. Add coconut and nuts and gently toss. Serve on individual plates and top with a dollop of yogurt. Garnish with mint leaves.
