1 shallot, minced 1 garlic clove, minced 1 Tablespoon red wine vinegar 3 Tablespoons extra virgin olive oil Salt and freshly ground black pepper 1 head butter lettuce, separated into leaves and bite-size pieces 1 small handful of sunflower sprouts 1/2 cup thinly sliced English cucumber 1 cup thinly sliced orange or red bell pepper 1/2 cup thinly sliced radishes 2 small to medium tomatoes, cut into wedges 4 oz. feta cheese
In a small bowl, whisk together the shallots, garlic, vinegar and oil. Adjust seasonings to taste with salt and freshly ground black pepper. Set aside.
In a large bowl, combine the lettuce leaves and sprouts. Add half the dressing and toss to coat the salad greens. Divide the lettuce and sprouts among salad plates. Top each salad with cucumber, bell pepper, radishes and tomatoes. Drizzle dressing over top and garnish with feta cheese. Serve immediately.
