Serves 6 Difficulty
For salad: 8 cups mixed greens 1 cup tomato, diced 1 cup green onions, chopped 1 cup jicama, diced 1 cup green bell pepper, diced 1 cup fresh corn kernels 1 cup avocado, diced One 16 ounce can black beans, rinsed and drained 1 cup monterey jack cheese, shredded 1 cup gf tortilla chips, coarsely crushed
For vinaigrette: 3/4 cup tomato juice 1/2 cup cilantro 1/4 cup fresh lime juice 1/2 teaspoon dried oregano 1/4 teaspoon salt 1/4 teaspoon ground cumin 1 jalapeno pepper, halved and seeded
For salad: Place greens on individual plates, or on a large platter. Arrange tomato, onion, jicama, bell pepper, corn, avocado and beans in separate piles on top of greens. Sprinkle with cheese and chips. Drizzle dressing over salad.
For dressing: Place all dressing ingredients in a food processor and process until smooth.
This recipe is not difficult, it just takes alot of prep.
