Ingredients
2 red potatoes, peeled & diced 1/3 cup gf sour cream 1-1/2 Tablespoon white wine vinegar 3/4 teaspoon sugar 1/4 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon dry mustard 1/2 cup celery, cut into 1/8" slices 1/2 small cucumber, peeled, halved lengthwise, and thinly sliced 1/2 teaspoon fresh dill, minced 1 hard boiled egg, diced Minced fresh chives for garnish
Directions
In a small saucepan cover potaoes with water and bring to a boil. Cook 10 minutes or until just tender. Drain and let cool.
In a large bowl combine sour cream, vinegar, sugar, salt, pepper, and mustard. Add celery, cucumber and dill; stir until vegetables are coated. Add potato and egg. Toss gently to coat. Garnish with chives.
