Avocado & Mango Salad

Ingredients

2 Tablespoons extra virgin olive oil
1 Tablespoon red wine vinegar
1 Tablespoon balsamic vinegar
Salt and freshly ground black pepper to taste
1 pound mixed salad greens, well washed
2 avocados, diced
2 mangos, diced
Directions
Combine oil and vinegars. Whisk until emulsified. Season to taste with salt and freshly ground black pepper.

In a large bowl, toss salad greens with avocado and mango. Drizzle with prepared dressing. Serve immediately.
Tips
This is a wonderful spring/summer salad that is easy to prepare and absolutely delicious.
