1/2 cup rice vinegar 2 Tablespoons sesame oil 2 Tablespoons gf soy sauce 1 Tablespoon gf brown sugar 1 Tablespoon fresh ginger, peeled and minced 1 Tablespoon fish sauce 1 cucumber, peeled, seeded and cut into match-stick pieces 1 carrot, peeled and cut into match stick pieces 1 red bell pepper, cut into match stick pieces 4 cups Napa cabbage, thinly sliced Salt and pepper
In a medium saucepan, stir together vinegar, sesame oil, soy sauce, brown sugar, ginger and fish sauce. Bring to a boil and then pour into a large bowl. Add cucumber, carrot and red pepper. Cool. Add cabbage and toss to blend. Season to taste with salt and pepper.
