1/2 English cucumber, peeled and sliced in half crosswise, them sliced into 1/4-inch slices. 1/2 cup pear or cherry tomatoes 1 teaspoon rice wine vinegar 1 teaspoon vegetable oil 1/8 teaspoon poppy seeds (optional) Salt and freshly ground black pepper to taste
Place cucumber and tomatoes in a medium bowl. In a small bowl, combine vinegar and vegetable oil. Add dressing to salad. Sprinkle with poppy seeds (optional) and season to taste with salt and freshly ground black pepper.
