3 large tart apples, peeled, cored and diced 1 Tablespoon lemon juice 1 cup black walnuts, cut into pieces 6 cups gourmet salad greens 1 bunch watercress, trimmed, washed and dried
For dressing: 1 teaspoon honey 3/4 cup dry vermouth 3 ounces sesame oil
In a large bowl, toss apples with lemon juice. Add nuts and mix again. In a small bowl, stir honey into the vermouth and add sesame oil beating slowly. Add salt and pepper to taste and beat until well blended. Add desired amount of dressing to apple mixture and toss to coat. Place salad greens on individual plates, top with a mound of apple mixture and add watercress leaves to the center. Serve.
