Ingredients
3 garlic cloves 3 Tablespoons gf prepared horseradish sauce* 1-1/2 Tablespoons apple cider vinegar 7 Tablespoons olive oil 2 cups shallots, thinly sliced 1-1/2 lb Yukon, red or small white potatoes, peeled and cut into 1/4" slices 10 ounces grape or cherry tomatoes, cut in half 8 ounces green beans, blanched 1-1/4 lb top sirloin steak 4 handfuls fresh greens
Directions
Crush garlic and place in a small bowl. Add horseradish sauce and vinegar, then whisk in oil. Season to taste with salt and pepper. Add shallots and toss to coat. Steam potatoes until tender, then remove to a bowl and let cool. Add tomatoes and beans to potatoes and toss with enough dressing to coat. Season to taste with salt and pepper. Heat oil in a heavy skillet over medium-high heat. Sprinkle steak with salt and pepper. When hot, add steak and cook until nicely browned on both sides, about 3-4 minutes per side. Transfer steak to cutting board and slice into thin strips. To serve, Divide greens among serving plates and drizzle with dressing. Top with vegetables and then steak strips.
