Tomato & Meat Sauce

Ingredients

6 large ripe tomatoes, seeded
1 large onion, chopped and divided
2 celery stalks, chopped
2 carrots, chopped
2 Tablespoons Italian parsley, chopped
1 Tablespoon fresh oregano, chopped
1 Tablespoon fresh basil, chopped
1 bay leaf
2 garlic cloves, peeled and crushed
1 Tablespoon tomato paste
Dash of ground cloves
Dash of ground cinnamon
1 Tablespoon olive oil
1 Tablespoon unsalted butter
3/4 pound ground beef
1/4 pound ground gf Italian sausage
1/2 teaspoon balsamic vinegar
Salt and freshly ground black pepper to taste
Directions
In a large saucepan combine tomatoes, 1/2 the onion, celery, carrots, herbs, bay leaf, garlic, and tomato paste. Heat over medium heat until simmering. Stir in ground cloves and cinnamon; cover and cook for 1 hour, stirring occasionally.

In a separate pan, heat olive oil and butter over medium heat. Add remaining onion and sauté until tender. Add ground beef and sausage; brown.

Add beef and sausage mixture to tomato sauce. Stir in balsamic vinegar and continue to cook for 40 minutes. Adjust seasonings to taste with salt and freshly ground black pepper.
