Makes about 1/4 cup Difficulty
1 cup balsamic vinegar 1/4 cup port wine
Combine vinegar and port in a small saucepan and bring to a boil. Reduce heat to a simmer and cook until reduced to about 1/4 cup. Let cool and refrigerate. The finished consistency should be like a thick varnish.
This is a must-have for your pantry. It will keep almost indefinately in the refrigerator. Bring to room temperature to use. A versatile seasoning, you can use it in salads, sauces, vegetables, seasoning for meats, etc.
