Ingredients
1 small garlic clove 1 Tablespoon mayonnaise 1 shallot, minced 2 Tablespoons fresh basil, chopped Salt and freshly ground black pepper Pinch of cayenne pepper 1/4 cup heavy cream
Directions
Mince garlic and season with about 1/8 teaspoon of salt. Using the back of your knife, mash garlic until it forms a paste. (This will remove some of the bitterness from the garlic.)
In a small bowl, combine garlic paste with mayonnaise, shallots and basil. Season to taste with salt, freshly ground black pepper and cayenne.
Beat cream until stiff and fold into mayonnaise mixture.
Serve immediately or cover and refrigerate for up to 2 days.
