Pear Chutney w/Oranges

Ingredients

1-1/2 large oranges
2/3 cup cider vinegar
1/2 pound gf brown sugar
1-1/2 teaspoons ground coriander
1-1/2 teaspoons mustard seeds
1 3" cinnamon stick, broken into thirds
1/4 teaspoon red pepper flakes
1/8 teaspoon ground cloves
1/8 teaspoon salt
1 pound under-ripe pears, peeled, cored and cut into 1/2" slices
One 8 ounce can chopped tomatoes
6 ounces raisins
1/4 large onion, minced
1/2 ounce fresh ginger, minced
1 garlic clove, minced
1/4 cup frozen, unsweetened apple juice, thawed
1/4 cup water
Directions
In a saucepan combine orange zest and orange juice; add vinegar, brown sugar, coriander, mustard seeds, cinnamon, red pepper flakes, cloves, salt, pears, tomatoes, raisins, onion, ginger and garlic to saucepan, mixing well. Bring to a simmer over low heat, stirring often. Cover partially, and continue to simmer for 1-1/2 hours. Add apple juice and water and simmer again until mixture is thick and syrupy.

Serve at room temperature. Store any left-over in refrigerator.
