Makes about 1-1/2 cups. Difficulty
1-1/2 lbs. ripe tomatoes, quartered 1 Tablespoon tomato paste 1/2 teaspoon sugar Salt and freshly ground black pepper to taste
In a medium saucepan combine the tomatoes, tomato paste and 1/4 cup water. Bring to a boil. Reduce the heat to low, cover and simmer for 10 minutes. Transfer the tomatoes to a food processor; process until smooth. Strain through a fine sieve into a small, clean saucepan. Add sugar and season to taste with salt and freshly ground black pepper. Keep warm over low heat until ready to serve.
This is a great sauce to add just a touch of flavor and beautiful color to dishes such as homemade ravioli and Mushroom Timbales.
