Makes about 4 cups Difficulty
1 Tablespoon unsalted butter 1 cup chopped onions 1 cup red wine 2 cups fresh cranberries Zest of 1 lemon Juice of 1 lemon 2 Anjou or Bosc pears, peeled, cored and chopped 1/4 cup chopped pecans 1/4 teaspoon ground allspice 1/4 cup sugar
In a medium heavy saucepan, melt butter. Add onions and saute until translucent. Add wine and cook and reduce for 5 minutes. Add cranberries, lemon zest, lemon juice, pears, pecans, allspice and sugar and cook, covered for 15 minutes. Serve hot or cold.
