Creamy Artichoke Sauce

Ingredients

2 Tablespoons unsalted butter
1 Tablespoon olive oil
1/2 cup onion, chopped
2 garlic cloves, minced
1 cup gf Chicken Stock
4 oz. cream cheese
2 Tablespoons parsley, chopped
1 14oz. can artichoke hearts (in water), drained and coarsely chopped
2 Tablespoons lemon juice
Salt and freshly ground black pepper
1/4-1/2 teaspoon hot red pepper flakes
Directions
Melt the butter in a large skillet over medium heat. Add the onions and garlic; sauté for 4 minutes or until the onions are tender. Add the chicken stock and cream cheese. Continue to cook, stirring constantly, for about 3-4 minutes or until the cream cheese melts. Stir in the artichoke hearts and lemon juice. Adjust seasonings to taste with salt, freshly ground black pepper and hot red pepper flakes.
Tips
This sauce is a nice compliment to grilled, or nut-crusted fish.
