2 Tablespoons extra virgin olive oil + more to thin if necessary 1 Tablespoon red wine vinegar 2 Tablespoons frozen orange juice concentrate 2 Tablespoons goat cheese Salt and freshly ground black pepper to taste
Place the oil, red wine vinegar, orange juice concentrate and goat cheese in a blender and blend until creamy. Adjust seasonings to taste with salt and freshly ground black pepper. Thin with a little more olive oil if necessary.
