Makes about 1-1/2 cups Difficulty
1 pineapple, peeled, cored and chopped 1 Tablespoon vegetable oil 1/2 small onion, chopped 1/2 small red onion, chopped 1/8 cup garlic, minced 1/4 cup granulated sugar 1/4 cup gf brown sugar 1 teaspoon cinnamon 1 teaspoon salt 1/4 cup red wine vinegar 1 teaspoon red pepper flakes 1 Tablespoon corn starch in 2 Tablespoons water
Saute onions on low heat in oil for 20 minutes. Add pineapple and cook for 1 minute. Add garlic, sugars, cinnamon and salt. Cook for 5 minutes. Add vinegar and pepper flakes. Bring to a boil and thicken with cornstarch and water mixture. Cool to room temperature.
