Ingredients
1 cup gf mayonnaise 2 garlic cloves, minced 1 large red pepper, roasted Salt and freshly ground black pepper 1 teaspoon gf dijon mustard
Directions
Roast pepper over a direct flame or under a broiler until blackened all over. Remove from heat, cover tightly and let sit for 10 minutes. Remove blackened skin and seeds.
In a food processor combine prepared gf mayonnaise, roasted pepper, garlic and dijon mustard; process until smooth. Adjust seasonings to taste with salt and freshly ground black pepper.
Tips
This is wonderful served on sandwiches or served as a delightful condiment to seared or grilled fish or poultry.
