Makes 1 cup Difficulty
3 red peppers 2 cups cream Cayenne pepper Salt
Place red peppers on a baking sheet and broil until skin blackens. Turn peppers until all sides are black. Remove peppers and place inside a sealed paper bag for 10 minutes. Remove peppers, remove skins and dice peppers. Add cream and peppers to a saucepan and bring to a simmer. Cook until reduced by half. Add salt and cayenne pepper to taste. Pour cream mixture into a food processor and process until smooth.
