1/4 cup cocoa powder 1/3 cup sugar 2 teaspoons gf flour Pinch of salt 1 cup milk 3 ounces gf semisweet chocolate, finely chopped 1/2 cup cream
Directions
In a medium saucepan, add cocoa powder, sugar, flour and salt. Whisking constantly, pour in milk. Bring mixture to a boil and cook for about 30 seconds.
Remove from heat and add chocolate. Stir until smooth, cover with plastic wrap and let cool.
Just before serving crepes, whip cream until it forms soft peaks. Stir 1/4 of the whipped cream into the chocolate, then fold in the rest of the whipped cream until well blended.
