Zucchini Stuffed w/Cheese

Ingredients

2 zucchini, about 5" in length
1/2 cup gf feta cheese, crumbled (we used Stella brand)
1/3 cup gruyere cheese, grated
1 Tablespoon gf flour
1/2 Tablespoon fresh dill, chopped
1 garlic clove, crushed
Fresh ground pepper and salt
Gf breadcrumbs
Butter
2 Tablespoons butter
1/4 teaspoon paprika
Directions
Drop whole zucchini into boiling, salted water. Cook at a simmer just until tender. Drain and let cool.

Mix cheeses with flour, dill, garlic, pepper and a little salt.

Slice cooled zucchini length-wise and scoop out seeds.

Arrange cut-side up in a serving dish. Sprinkle zucchini with salt and pepper.

Fill zucchini with cheese mixture. Sprinkle with breadcrumbs and dot with butter.

In a small saucepan melt 2 tablespoons butter; stir in paprika.

Place zucchini under a broiler until cheese is bubbling.

Remove from broiler, drizzle with paprika butter and serve.
Tips
These are delicious! This is one of our favorite zucchini dishes.
