4 ounces gf bacon, cut into 1/4" pieces 1/2 cup onions, thinly sliced 2 pounds potatoes, peeled and thinly sliced 4 Tablespoons peanut oil Salt and pepper to taste
In a large skillet over medium heat saute bacon until browned; remove from pan. Add onion and saute until onions are soft but not browned; remove from pan. Discard bacon fat.
In a large bowl add potatoes, 2 tablespoons peanut oil, salt and pepper; coat well. Stir in bacon and onions.
Heat skillet to medium heat and add potato mixture. Cover, reduce heat to low and cook for about 20 minutes until bottom is browned.
Slide potatoes onto a plate and add remaining 2 tablespoons oil to skillet. Place another plate upside-down on top of plate of potatoes and flip over. Slide potatoes back into skillet, uncooked side down. Cover and cook for 20 more minutes.
Slide potato onto a cutting board and cut into wedges to serve.
