4 large sweet potatoes 1 dried chipotle pepper 2 Tablespoons unsalted butter, melted 1 Tablespoon cilantro, chopped 1 teaspoon salt One 16 ounce can orange juice concentrate, thawed
Place dried chipotle pepper in 1/2 cup water and microwave on high for 1 minute. Let steep for 15 minutes. Remove pepper; reserving liquid.
In a medium bowl, combine 2 tablespoons chipotle water with butter, cilantro, salt and orange juice. Set aside.
Peel and cut sweet potatoes in half, lengthwise.
Bring a large pan of water to a boil. Cook potatoes for 5 minutes or until crisp-tender; drain. Rinse with cold water; drain.
Lightly grease a broiler pan. Place potatoes on broiler pan and baste with orange juice mixture. Broil for 4-5 minutes per side, basting frequently with orange juice mixture, until tender and lightly browned.
