1 pound green beans, washed and trimmed 1 Tablespoon butter Salt and fresh ground pepper to taste 3/4 cup cashews 2 Tablespoons parsley, chopped
Blanch beans in boiling salted water. Drain beans and add butter and salt and pepper to taste to pan. Cover with lid and shake to coat all beans. Add cashews and parsley to pan; cover and shake again. Serve immediately.
Green beans are also great with other nuts. Dry toast slivered almonds, pine nuts, pecans or skinned and chopped hazelnuts for variation.
