Ingredients
4 medium red onions, peeled 1/4 pound soft mozzarella, crumbled 1/4 cup pine nuts, toasted 1/4 cup sherry 1/4 cup raisins Fresh cracked black pepper
Directions
In a small saucepan, over low heat, add sherry. Heat until just before boiling, adding raisins. Remove from heat, cover and let steep for 15 minutes. Drain.
Cut a thin slice off the root end of each onion so onions will stand upright. Cut 1/4" off the other end of each onion.
Bring a large pot of water to a boil and blanch onions for 10 minutes. Remove onions to a bowl of ice water to halt cooking process.
In a medium bowl, combine mozzarella, pine nuts, sherry- steeped raisins and pepper. Mix well.
With a paring knife, carefully cut out centers of each onion, leaving sides and bottoms intact. Stuff with cheese mixture and wrap each onion in heavy foil.
Prepare a grill and set foil packs around outside of the fire for about 30 minutes. Open packs and serve.
Tips
This is a wonderful recipe to make with any grilled meat.
Cutting the insides of the onion away takes a little doing. Don't give up, it is well worth the effort.
