2 pounds sweet potatoes, peeled and cut into 1/2 inch slices 2 Tablespoons brown sugar 1 bacon slice, cut into 1 inch dice
Preheat oven to 400°F.
Lightly butter a 13x9 inch baking dish and arrange sweet potato slices in dish. Sprinkle with brown sugar. Place bacon on top. Bake for 30 minutes. Turn potatoes over. Bake for 20 minutes longer or until tender. Season to taste with salt and freshly ground black pepper.
