1 Tablespoon sesame oil 2 teaspoons fresh minced ginger 1 garlic clove, minced 1 shallot, minced 1 red bell pepper, cut lengthwise into thin strips 1 zucchini, julienned 6 ounces shiitake mushrooms, stemmed and cut into thin slices 3 green onions, thinly sliced on a diagonal 2 cups bok choy thinly sliced (green leafy tops only) 1 Tablespoon fresh basil, slivered
Heat the oil in a large skillet over high heat. Add the ginger, garlic and shallots; sauté for 1 minute. Add the bell pepper; sauté for 3 minutes. Add the zucchini; sauté for 2 minutes. Add the mushrooms, green onions and bok choy; sauté until bok choy is just wilted, about 2 minutes. Adjust seasonings to taste with salt and freshly ground black pepper. Serve immediately.
