1/4 lb. bacon, chopped 1 small cauliflower head, cored and cut into small florets 2 shallots, minced 1 bay leaf 1/4 cup dry white wine 1/2 Tablespoon fresh lemon juice Salt and freshly ground black pepper 4 ounces baby spinach
Directions
In a large skillet, brown the bacon over medium-high heat. Using a slotted spoon remove the bacon from the pan and let drain on paper towels. Remove all but 1 tablespoon of bacon fat from the pan. Add the cauliflower, shallots and bay leaf. Sauté for about 5 minutes. Add the wine to the pan. Cover and cook over medium heat until the cauliflower is tender about 10-15 minutes. Add the spinach to the pan and stir once or twice to just warm the spinach (don’t completely wilt the spinach). Season with salt and freshly ground black pepper and lemon juice. Serve immediately.
