4 Yukon Gold potatoes 1 garlic clove, peeled 3 Tablespoons unsalted butter 1/4 cup buttermilk Salt to taste 3 Tablespoons chopped chives
Directions
Peel potatoes and cut into a 1 inch dice. Place them along with peeled garlic clove in a large saucepan. Cover with water (about an inch above potatoes) and add 1/2 teaspoon salt. Bring to a boil; reduce heat and simmer until potatoes are tender, about 15 minutes. Drain and return potatoes and garlic clove to saucepan. Add butter and buttermilk. Using an electric hand mixer, beat potatoes until smooth. If they are too dry add a little more buttermilk. Stir in chives. Season to taste with salt.
