2 Tablespoons vegetable oil or Ghee* 3/4 teaspoon minced garlic 3/4 teaspoon minced fresh ginger 1 green chili, seeded and minced 1 onion, chopped 1-1/2 oz fresh spinach, washed 1/4 teaspoon salt 1/4 teaspoon Garam Masala** 4 Tablespoons cream
Directions
Heat a large non-stick skillet over medium heat. When hot add ghee or oil. When hot add onion, chili, garlic and ginger and saute until onions are tender, about 5 minutes. Add spinach with rinsed water clinging to leaves and salt. Toss and stir until spinach wilts. Reduce heat to low and cook until spinach is soft. Add garam masala and cream, stirring and gently simmering. Adjust seasonings and serve.

*Ghee is the Indian version of clarified butter. **Garam Masala is an Indian spice blend that can be found in specialty food stores or natural food stores.
