2-1/2 to 3 lbs. baby new potatoes, cut in half 1 Tablespoon olive oil Salt and freshly ground black pepper 2-3 Tablespoons Italian parsley, chopped 1/2 cup feta cheese, crumbled
Preheat the oven to 400°F.
Place the potatoes in an even layer in a baking dish and add the olive oil. Stir to coat. Season with salt and freshly ground black pepper. Transfer the potatoes to the oven and roast until the potatoes are nicely browned and tender when pierced with a fork, about 30-40 minutes.
Transfer the potatoes to a serving bowl. Top with feta cheese and chopped Italian parsley. Serve.
