Mixed Potato Fries

Ingredients

1 large sweet potato, peeled
1 large russet potato, peeled
Peanut oil
Kosher salt
Directions
Cut peeled potatoes into 1/2"x1/2" strips and place in a bowl of ice water.
Place about 2 inches of peanut oil in a large, deep pot and heat to 300 degrees F. In batches, fry potatoes for about 5 minutes or until they begin to turn golden. Remove to a plate of paper towels and repeat for all potatoes.
Just before serving time, reheat oil to 300 degrees F. and re-fry the potatoes until golden brown. Drain on paper towels and sprinkle with salt. Serve immediately.
Tips
The first frying can be done a couple of hours ahead.
