Cauliflower Gratin

Ingredients

1 medium head of cauliflower, trimmed and cut into florets
Cooking spray
2 Tablespoon extra virigin olive oil, divided
1/2 teaspoon salt
2 teaspoons unsalted butter
1/2 cup gf bread crumbs, (process in a food processor to get the finest crumbs you can get)
1 cup Gruyere cheese, shredded
2 Tablespoons chives, finely chopped
2 shallots, finely chopped
1 garlic clove, minced
3 Tablespoons gf flour
1 cup milk
1 cup heavy cream
3 Tablespoons Italilan parsley, chopped
1/4 teaspooon freshly ground black pepper
Directions
Preheat the oven to 400°F. Lightly grease, with cooking spray, a 2 quart, broiler safe, baking dish.

Place the cauliflower into the baking dish and toss with 1 tablespoon olive oil. Sprinkle with salt. Bake for 30 minutes or until almost tender. Cool for about 5 minutes.

Preheat the broiler. Melt the butter in a small saucepan over medium heat. Remove from heat. Stir in the gf bread crumbs, 1/4 cup Gruyere cheese, and chives.

Heat the remaining olive oil in a medium saucepan over medium heat. Add the shallots to the pan and saute for 2 minutes. Add the garlic; saute for 30 seconds. Add the gf flour; cook for one minute, stirring constantly. Gradually add the milk and cream, stirring with a whisk; bring back to a boil. Cook, stirring constantly, for about 3-4 minutes or until thick. Remove from heat and stir in the remaining cheese, parsley and pepper. Adjust seasonings to taste with salt. Pour the sauce over the cauliflower; stir to combine. Top with the gf bread crumb mixture and broil for about 3 minutes or until golden brown and thoroughly heated. Serve.
Tips
We used Kinnickinnik’s white bread for the gf bread crumbs in this recipe. While the bread is still frozen cut into small cubes. Toast, then place in a food processor and process until fine crumbs result.
